A special category are the olive oils characterized as Kalamata PDO, whose viscosity limit is much lower (<0.5). However, in addition to the criterion of acidity, which is the most well-known, in order to qualify an olive oil as Kalamata PDO, it must also meet certain other quality standards, as stated on the bottle
